make sambal olek

Ingredients:
  • 20 fresh, red chillies or cayenne pepper (deseeds and sliced)
  • 12 shallots sliced
  • 4 cloves garlic peeled and sliced
  • 1 fresh tomato, peel and wedges
  • 1 1/2 tsp shaved coconut sugar (palm sugar /brown sugar)
  • 1 tsp salt or to taste
  • 1 tsp toasted shrimp paste
  • 4 tbsp coconut oil
  • Cheek of lime to serve
how to make:

  1. Heat oil in a wok or skillet, add the chilli, shallots and garlic, 
  2. fry for about 3 minutes or until medium soft.
  3. Add tomato and continue to quick fry for another 1 minutes.
  4. Off the heat and transfer the ingredients into mortar and pestle
  5. add in toasted shrimp paste.
  6. Simply season with shaved coconut sugar and salt, 
  7. have a taste and adjust to you liking.
  8. Serve as your side dish together with the cheek of lime (squished)
