Mandi it is traditional food from Yemen. but now it is Vere popular Arab country also India region.The meat is first boiled with whole spices until tender. The spiced stock is then used to cook the Basmati rice. The boiled meat is then put into the 'tandoor' to roast and crisp. When the rice is done the final part would be to smoke the rice by adding a piece or charcoal amber onto some cooking oil on a metal dish and put into the rice and cover to smoke for about 10 minutes. this dish is usually accompanied with Tzatziki.
Mandi is considered the main dish served during special events, such as Eid, weddings, and feasts.

Ingredients:
- 3 kg big lamb chunks
- 1 tablespoon Saffron Color
- 1 tablespoon Natural Saffron
- 2 tablespoon salt
- 4 cups Basmati rice(soak)
- 2 tablespoon ghee oil
- 1 cup raisins
- 4 cinnamon sticks
- 6 cardamom pods
- 1 teaspoon black pepper pieces
- ½ teaspoon cloves pieces
- 2 dried lemon
- 2 sliced onions
method:
- Cook onions with pinch of salt & sugar till soft. Add hard spice, 1 ½ tbsp. salt & raisins to cook for 2 minutes with medium heat.
- Turn off heat, add washed rice and 4 cups of hot water.
- A small bowl with hot water add colored, natural Saffron, salt and brush it on meat. Make holes in meat with knife.
- Place pizza rack or aluminum foil on top of rice, add meat, and cover with aluminum foil.
- Cook in top rack oven at 200 Celsius for 3 hours.
- now serves it big dish with some top garnish( onion fry,tomato slices,lemon)
