Jalamah is the traditional dish of Asir, native to Bareg .Jalamahis made from Lamb (meat), and a mixture of spices. The meat used is usually a young and small sized lamb to enhance the taste further.and always cooks on the days of Eid al-Adha, where meat and slaughter are abundant(article from wikipedia).

Ingredients:

  • Meat cut into small pieces and meat with bone also small pieces and quantity as you like
  • fat(Arabic:شحم) also cut into small pieces(Little bit more then small).
  • 2 onion chopped
  • salt (like guess)
  • black pepper(like guess)
  • green pepper(like guess)
  • 5 cardamon pods
  • Cinnamon powder(like guess)
  • Coriander powder(like guess)

preparation:

  • preparation the meat separate and fat(shaham)separate without washing.
  • mix salt, onion,spices with meat
  • than put large Saucepan high heat with all fat start cook. every 2 minutes do shifting.
  • control heat shifting fat to until gold color.
  • than add meat carefully and continue shifting every 3/4 minutes until brown color.
  • than take some fat small Saucepan.
  • than add spices(black pepper,cardamon,Cinnamon,coriander powder)
  • finish cook than Saves in a good place, At normal room temperature
  • One of the characteristics of the meaty eaters is that it preserves meat for a long period of up to one year.
