Jalamah is the traditional dish of Asir, native to Bareg .Jalamahis made from Lamb (meat), and a mixture of spices. The meat used is usually a young and small sized lamb to enhance the taste further.and always cooks on the days of Eid al-Adha, where meat and slaughter are abundant(article from wikipedia).

Ingredients:
- Meat cut into small pieces and meat with bone also small pieces and quantity as you like
- fat(Arabic:شحم) also cut into small pieces(Little bit more then small).
- 2 onion chopped
- salt (like guess)
- black pepper(like guess)
- green pepper(like guess)
- 5 cardamon pods
- Cinnamon powder(like guess)
- Coriander powder(like guess)
preparation:
- preparation the meat separate and fat(shaham)separate without washing.
- mix salt, onion,spices with meat
- than put large Saucepan high heat with all fat start cook. every 2 minutes do shifting.
- control heat shifting fat to until gold color.
- than add meat carefully and continue shifting every 3/4 minutes until brown color.
- than take some fat small Saucepan.
- than add spices(black pepper,cardamon,Cinnamon,coriander powder)
- finish cook than Saves in a good place, At normal room temperature
- One of the characteristics of the meaty eaters is that it preserves meat for a long period of up to one year.
