Saudi hareesa recipe/ saudi local food/هريسة
It originates from Yemen and has migrated to the Kingdom of Saudi Arabia. Harisa (Harissa, Harees, Haresa) is popular in the Holy Month of Ramadan or served as a heavy breakfast meal. It is enjoyed by many people in the Kingdom. It’s written in many different ways such as Harisa, Haresa, Harissa or Hareessa, A healthy recipe in the middle east.

INGREDIENTS:

  • 2 Pce Cinnamon stake
  • 5 Pce cloves
  • 4 Pce cardamon pods
  • 1 Tsp Cumin seeds
  • 500 g lamb W/ bones
  • 2 cups soaked wheat grains
  • melted ghee oil
  • grinded sugar or honey

how to make:

  • In a pot with 3 liters water on high heat, add spices strainer (with cinnamon, cardamom pods, cumin seeds, and cloves), lamb meat with bones, and cook for 1 hour.
  • Remove spice strainer and bones from meat.
  • Add 2 cups of soaked wheat grains and cook for 2 hours. However, keep checking every 15 minutes to avoid the wheat from sticking.
  • Keep smashing wheat with a spoon till smooth. If not smooth, use hand blender to make smooth.
  • Serve hot in a bowl, drizzle ghee oil on top, and sprinkle either fine sugar or honey according to taste.
