Ingredients:
- 100g dried chilies
- 100g fresh red chilies
- 10g brid's eye chilies
- 250g shallots
- 1 big onion
- 10g ginger
- 15g blue ginger
- 15g shrimp paste
- 1 1/2 cup cooking oil
- 40g tamarind pulp
- 30g garlic
- 1/4 cup water or like to need
- 50g sugar
- 1 tsp salt
how to make:
- use a scissor to discard dried chilies head and cut into1/3 pcs and boil in hot water for 5min.
- drain and discard the chilis seeds if you want less spicy.
- toast in a frying pan, chopping and break it up till powdery and aromatic.
- blend dried chili, fresh chili, shallots, onion, ginger,blue ginger,shrim paste with 1/4 cup of water till smooth paste.
- pour chili paste into a big wok, stir fry for 5-10min over medium low heat until slightly dried paste by not adding oil at this time as to avoid oil spill.
- now add in cooking oil, continue stirring(tumis) over low heat for 30-40min.
- the chili paste will turn darker, light and oil separated after long stirring.
- add in assam water, salt and sugar, continue stirring(tumis) for 5-10mins.
- leave to cool before storing in the fridge or freeze small containers for later use.
