Ingredients:
- 300g chicken
- 5ml cooking oil
- 2cups water
- 100g fresh coconut milk
- 20g red chilli
- 50g red onion
- 20g garlic
- 10g ginger
- 10g galangal
- 5g fresh turmeric
- 15g chicken masala powder
- 50g gulai paste
- 20g curry powder
- 50g turmeric juice
- 5g brown sugar
- 5g salt
- 200g chicken stock powder
How to make:
- Blend the chilli paste ingredients together.
- Pre-heat oil and stir-fry the chilli paste.
- Add the spices and stir-fry until fragrant
- Add 2 cups of water and bring to boil
- Add the chicken, cover and bring to boil
- Add in the coconut milk
- Cook for about 35 minutes on low heat until chicken is tender.
- Add in the seasoning
- Let the concoction boil for 2-3 minutes
