ingredients:
- One duck young meat (cut into 4-5 parts of the body)
- 3 tablespoons of vinegar
- 500 ml of boiled water
- 4-5 lemongrasses crushed
- 3 pieces of lime leaves
- Frying Oil
- 4 garlics
- 8 red onions
- 1 teaspoons of coriander that you have already toasted
- 2cm ginger
- 1cm turmeric
- 7 pecans
- 2 teaspoon of salt
- 5-7 lime leaves (sliced and throw the bones)
- 2 cm galangal
- 3 cm white part of lemongrass (sliced)
---Sauce for fried duck---
- 5 tablespoons oil
- 5 red onions
- 6 pieces red pepper
- 12 pieces of cayenne pepper
- 2 tomatoes (choose the red one)
- 125 ml (boiled water)
- 1/2 to 2 1/2 teaspoons of shrimp paste (bake or fried)
- 1 teaspoon of salt
- Sugar to taste.
method:
- Boil the young duck a half cooked, and then lift it (just to make the young duck soft or tender).
