Ingredients:
- 4 tablespoon cooking oil
- 1 tomato, cored and seeded
- 5 shallots
- 100 gram red chilies
- 1/2 tablespoon shrimp paste
- 2 tablespoon palm sugar
- 1/4 teaspoon salt
- juice of 1/2 lime
- 1 cucumber, peeled and cut into 2 inch lengths
- 2 carrots, peeled and cut into 2 inch lengths
- 15 green beans, cut into 2 inch lengths
- 1 chayote, peeled, cored and cut into cubes
- 100 gram cabbage, cut into bite size pieces
how to make:
- Heat cooking oil in a frying pan, fry the tomatoes and shallots until softened. Set aside.
- With the same pan, fry the chilies until softened. Set aside.
- In a food processor, grind tomatoes, shallots, chilies and the rest of the sambal terasi ingredients to a fine paste.
- Prepare a steamer. Steam carrots, green beans, chayote, and cabbage until tender and cooked, about 10 minutes.
- Arrange cucumber and all the steamed vegetables on a plate. Serve with sambal terasi.
