Ingredients:
- 1/4 cup fine bulgur wheat
- 1 1/2 cup finely chopped parsley
- 3 large tomatoes, diced
- 1/2 cup finely chopped onion
- 1/2 cup finely chopped fresh mint leaves
- 1/4 cup lemon juice
- 1/2 cup extra virgin olive oil
- 1/2 tsp salt
- 1/4 tsp freshly ground black pepper
- 2 tbsp pomegranate syrup or concentrate
- 1/2 tsp lemon zest
- Place the bulgur wheat on a bowl and cover completely with boiling water leaving about one inch of water over the wheat. Let it rest for 15 minutes, drain and reserve for using. Alternately you can use room-temperature water and let the grains rest for 1 hour. In both cases do a quick check for doneness by tasting the grains.
- Meanwhile chop and cut all vegetables as directed and mix the all ingredients in a single bowl. Add the softened bulgur, stir well and serve immediately.
